The Edinburgh Gin range is distilled in one of two 140-litre copper pot stills. The stills are different shapes to allow for numerous techniques to be employed, and a great deal of the team are distilling students from Heriot-Watt University.

Edinburgh Gin was founded by former drinks retailer Alex Nicol, who – along with his wife Jane – was inspired to create his own. Gin. Head Distiller David Wilkinson now leads the distilling team in developing their range of contemporary gins.

Clean, fresh and spicy on the nose. The nose shows pine and juniper notes, with heathery scented notes following on. A well balanced crisp gin with gingery spiciness and laid back citrus character. Edinburgh Gin uses fine local grain spirit and traditional gin ingredients but adds soft Scottish botanicals such as heather and milk thistle for a fresh take on British gin.
