Cazcabel is fresh, smooth and well balanced, it has notes of earthy agave and citrus. It's very slightly smoky on the finish. They suggest adding this to a ‘Tequila Spritz’ with Aperol, grapefruit and Prosecco.
process:
Using agaves grown for over 7 years, they steam the piñas in autoclaves. Once cooked, they ferment in tanks with naturally occurring yeasts for 10 days before distilling in a combination of copper pot and steel stills. The spirit is chill-filtered.

100% Blue (Weber) Agave grown and harvested in the highlands of the Jalisco mountains, the skilled jimadors only select mature agave plants, usually more than 7 years old. Triple distilled in the heart of the Jalisco region to produce a premium earthy spirit, a spirit fashioned from the sun-baked agave, Cazcabel Blanco beautifully balances the Agave's earthy notes with a fresh citrus edge. Spicy, slight hint of citrus with a rustic hit of earthy agave. Dry with a touch of black pepper at the finish.
